Advising cooking in brassware is completely wrong. Before stainless steel came into our homes, we used tinned brass vessels. But many poorer people didn't take care to have them properly re-tinned in time and this was the main cause young children contracted serious liver disease and died. The acid in most of our cooking reacts with the copper in brass and produces poisonous compounds. After the advent of stainless steel, no one has even heard of this liver disease among children.
