Wrong on facts
by Girish K on Nov 22, 2014 10:34 AM  | Hide replies

1. Recently, Mediterranean diet was rated as the most heart healthy diet. There are liberal doses of Cheese and Olive oil in this diet.

2. Ghee being bad for health has no scientific basis.

3. Whole wheat contains Phytic acid, which is an anti-nutrient (prevents absorption of some nutrients, mainly minerals, into the body).

4. Phytic acid can be neutralized by leavening (adding yeast), soaking, sprouting (rye bread) and some other techniques.

People with no understanding of nutrition are writing "scholarly" articles here.

As per latest study in USA Cocanut oil is better than Olive oil. When it heat if heat is more than 150 degree olive oil get toxic but Cocanut oil not.

Olive oil does not get toxic, but any oil heated about its smoke point is bad including ghee, and yes coconut oil is the best, but they fed us wrong info all these years so that some company could push palmolin oil and sunflower oil, which are actually worse then coconut oil.

Instead of appreciating the contents of the article, it is strange that you have chosen to point out a normal typing error and on the top of that making an unnecessary remark about people from North.

How healthy is our humble chapati?
by Sheetal Kaur on Nov 21, 2014 05:14 AM  | Hide replies

To start with why Chapati, Why not proper name Roti. What is wrong with calling it a Roti.
Will a European say How healthy is our Alloo No he will not say that.
Now if every indian just eats 1 Roti at in the evening then there are 1.5 billion Roti's baked multiply this by three meals a day that is 4.5 billion Roti's a day, So far Roti has done no harm to any one, YES THEY ARE VERY HEALTY, Those who can't tolerate wheat or glutton can use other flours.
Roti is not only baked and eaten by the people of India subcontinent, It is baked in West Indies, Trinidad and Tobago,Kenya,West Africa and is called Roti. and many other countries bake them, In Mexico they are backed with white flour (Maida) and are called Fujitas, Arabian countries bake them in tandoor and call them NAN. basically they are all variations of GOOD OLD INDIAN ROTI.

ROTI is a traditional unleavened whole-wheat bread which, depending on the country and the cook, can be as thin as a "skin" or soft and pliable, closer to a pita

Whereas CHAPATI is traditionally made from very finely milled whole wheat "chapati flour" and tend to be thin and papery
Therefore you can't use the same name for both

Europeans dont call it chapati, they either call it tortilas or roti, they hardly know what a chapati is. accept it the guy pointed your mistake, just because you are a girl you dont need to have such a big ego about cooking.

Oil on Roti
by Ajit Birdi on Nov 21, 2014 01:59 AM

Roti is only coated with oil etc to keep them soft. if one wishes to store them for few hours.
If eaten immediately there is no need to coat a Roti with oil. Matter in fact it is more delicious dry straight off the Cooking pan or tandoor. TRY IT.

definitely maida is high glyemic so should be avoided. however, all fats are not bad. use coconut oil or ghee sparingly to roti is okay. but ALL vegetable oils are diabetogenic so avoid. refined veg oils are the worst and guarantee for diabetic disease

If we listen to the experts we can't eat anything or enjoy eating anything. The most sensible thing would be to eat everything in moderation just as our previous generations use to.

Our Indian food is the best for Indians and there is a lot of propaganda from the West to make us give up our eating habits and to push there products.

That might not help you if all the things you eat in moderation are made in a highly industrialized fashion.

Parotta Enemy No.1
by Rosy Monty on Nov 20, 2014 04:52 PM  | Hide replies

Parotta made out of maida is the best friend for the diabetes. It just kills the beta cells in the pancreas that produces insulin. Its proven that 2 parotta shops around any area running successfully over 2 years, then sure there will be at least 20% increase in diabetics.

Where as diabetic is referred to the person who is having DM. Hope you all got it right.

Maida is banned all over the world, including Kerala, The acid residue that is used for bleaching flour indeed kills the beta cells of the pancreas
