salt, red chilly, pepper and 2 spoon sugar??? its impossible that this dish is from UP. sounds more like a gujarati style.

Traditionally panch phoran powder is mixed with the bhuna masala and used as stuffing. This step is missing. The dry masala here used is different. However this recipe will also taste good.

Since the brinjal is not dry, the masala used will also not be dry.....

After mixing with the bhuna masla the dry masala will naturally become moist. The dry masala panch phoran is ground dry since it is lightly toasted before gringing to bring out the flavour and it is more convient to dry grind toasted masalas.
