In fact, when it comes to diet, there is no single fit for all plan. It varies on the lifestyle, climate and genetic structure. Human body also has capability to tolerate the aberrations. And there is no bad food, there are only bad quantities. Indulging into something because you love it or avoid something because you don't like it are two bad habits one should avoid.

Our Indian foods from all states is better and our previous generations had no trouble at all. The West comes up with many studies to push their products and change our dietary habits. Our forefathers led a healthy life with our foods.Only modern life has made us rely on gadgets and we don't get enough exercise like walking, etc. Our Indian foods with adequate exercise with moderation in intake is enough to make us live a healthy life.
It seems that the author has written the book with people living in cold climate regions like Europe or US, Canada. The best way to remain healthy is to include more of those foods which are grown in that region. Like it will be foolish to eat more of rice if you are living in Punjab, since due to the climate the digestion is fast and you feel hungry often, so more of wheat products need to be added to the diet. That is also the reason that rice is eaten less in Punjab region.

Japan is colder than Punjab, yet rice is their staple diet...
Coconut can be had in its raw form. It is a very good source of nutrition. The Author of this book is misleading people. We have seen some coconut eating states and islands. People are living for 90 years in these islands just surviving on coconut. The coconut water helps you in getting vital minerals for the body.

I haven't read the book. But if the author thinks coconut is bad for health, he/ she must be "nuts"!!
