To open a successful restaurant in upmarket Mumbai, it takes more than what is stated in this article!

First, you need to find a local political "patron" i.e. local MLC or MLA to play G 0 d father to your establishment.

This is very expensive in terms of paying advance "homage" before you start your restaurant and then regular "thank you" amounts every week or month as the "understanding" may be!

Next, you have to deal with municipal authorities (monetarily) who will harass you no matter how by-the-book you follow all the rules and regulations!

Next, you have to deal with the local goons. If the belong to the same party as your "patron", then their "share" is "adjusted" in the weekly or monthly "thank you" payments.

If the goons happen to belong to some other party, then you have to earmark a different set of "thank you" payments!

Next, are the exorbitant operating costs that can kill any venture.

So unless you have 'nectar-drenched' offerings on your menu for which you can charge 4 figure rates, pick a different trade.

If you still want to break into the highly competitive Mumbai restaurant market, a v a d a p a v stall is your best bet!
