Vegetarianism indeed must be seen as a virtue

to possess in India !

Vegetarianism in India is generally regarded as 'elevating' from two perspectives; the first from the need to avoid killing (humanness) and the second from the widely held belief that vegetarianism in some manner 'purifies' the mind and spirit (spirtual cleansing) !

I do not know much about the 'spiritual' part of the deal. There is a great deal written about it in India but as with many matters that are allegedly 'spiritual', this one too is cloaked in extreme subjectivity and even stray on to the realms of obscurantism.

But the temporal aspects of vegetarianism in India can hardly be called obscure. There are two such temporal aspects about handling non-vegetarian food that are always important. The first is the cruelty dealt to animals and the second is the hygiene (or lack of it) related to it.

Non-vegetarianism in India is a case study of how extremely cruel and how extremely unhygienic it can get !!

Western or developed societies have long since all but solved these two problems by having well regulated laws in place for 'stunning' animals before they are cut up (a procedure that kills the animal before it knows pain) and another set of equally well regulated laws that make quality automation of all cleaning, sorting, packing, storage and transporting operations mandatory.

In India however, the animals (especially large ones such as the buffalo and the goat) are still repeatedly hacked and they die writhing

in prolonged spells of agony. And hygiene, not surprisingly, is never considered important in slaughter houses (though the authorities keep claiming that there are certain regulations for that and take certain measures such as ‘stamping’ meat). The extreme filth permeating most slaughter houses in India is a given and it never raises anyone's concern.

Admittedly, lack of hygiene is a bane in the handling of vegetarian food also in India. 'Pure' vegetarian eateries are also as horridly unhygienic as their non-vegetarian counterparts. However, should the choice be forced, unhygienic veg. food is preferable any day to unhygienic non-veg. food.

Therefore, it is better that the Indian shuns non-veg. food. He does not have the capability or the will to bring himself to be humane enough or clean enough to handle non-veg. food !!
