It means cooking twice with onions.Once ground into a paste and the other half sauteed or fried.

A do pyaza msut consist of the Onion more than the quantity of meat (not Necessarily double the quantity, it must be more than enough). The onino should be sliced no grated, quartered or chopped. A do pyaza is mad of lamb or beef only. Chicken Or Paneer are latest versions. But basic is lamb or beef only.

It must have curd which should be added in the end just before finishing off. and all spices used must be whole like Red Chilly, Black paper, Garlic etc. except ginger it should be chopped fine.
