TIME TO BIFURCATE
by Chef Sudhakar N Rao on Dec 03, 2014 03:12 PM  | Hide replies

With due respects to the person/persons who wrote or contributed to the article I would like to state that its high time that all Hotel.hospitality, catering and culinary professionals should understand that Hotel Management is a different stream and Professional Culianry Arts is a different stream as far as the career options go. Times have changed and like America and Europe India too has good number of Culinary Colleges and are churning out excellent young chefs for the industry. Its sad to see that 95% of the names of the colleges mentioned in the article are basically hotel management colleges and not culinary colleges.Itys already an accepted fact that in order to be a professional chef one has to undergo a professional culinary arts course and not hotel management.Food production is just one of the many subjects that are taught in the hotel management course unlike the culinary course where food production takes the centre stage and also the focus is only and only on food production.

It depends that after graduation are you ken to invest in another three years in a fulltime Culinary Arts graduation program. One caution if you really want to become a chef then I would say that go for only Bachelor's in Culinary Arts and not hotel management. Now we have specialised Culinary Programs which have a much higher concentration on food production in the curriculum. Hotel management has other subjects and the focus on food production remains at a very basic level.
