Not available because this is such a backward land, but it's a great business opportunity for some savvy entrepreneurs....start making tofu, growing bok-choy, collard greens etc that diet minded people will want to buy.

Tofu is very much available now at least in the urban India. Also it can easily be made from Soya beans. Search google to know how to make tofu at home.

For vegetarians, in order to bridge the nutritional gap, the best thing is to take nutritional supplements. In this Nutrilite is the best one as it is World's No.1 in food supplements
Most of us Vegetarians ( and NOn Vegetarians) do not follow the traditional diet that our ancestors followed. Traditional foods are well balanced time tested nutritional food...the vraths, fasting, and particular foods during particular days/festivals all there for a specific reason ..medicinal and to keep up health during various seasons. Since none of us follow these diets anymore...we need to read articles like these. Go back to the diets your grandparents followed, avoid junk food and eating out, do lot of housework ( or fieldwork) and we will live a healthy life and live long.
There is also a difference in the kind of diets in different regions of India due to availability of items and weather conditions...we need to change our diets accordingly

You make an excellent point - it is best to follow primarily your traditional diet. There have been studies where people suddenly following a new diet (for example immigrants) develop health issues.
